Herb Crumbed Roast Tomatoes (Serves 6): 1. Cut tomatoes (6 ripe tomatoes) in half, drizzle with oil and roast in a 200°C oven for 20 minutes 2. Mix breadcrumbs with herbs (Fresh Herbs: Parsley, Thyme, Basil, Oregano), grated Perfect Italiano Mozzarella, olives (pitted black olives) and some extra oil (olive oil) 3. Top the tomatoes with the breadcrumb mixture and roughly chopped prosciutto (6 slices). Bake for 15 minutes until golden. Fresh Tip: Use up bread that's about to stale to make breadcrumbs and freeze them until required
